I have been using certain nutrients for the veg and 2 weeks of bloom stage I am not liking what I am seeing at all. Is there a problem if I were to switch out my existing nutes and take a different approach? What would be the safest way as the old nutrients were synthetic for the most part.

I doubt the nutrients are the problem. What happens if you switch and the next brand sucks too? I don’t recommend switching nutrient lines mid grow and definitely not during flower. If you did switch, a true flush would probably be a good idea. I recommend switching next grow, a different brand isn’t going to save whatever’s going on now. With any nutrient line, it comes down to how you use them. Sometimes it takes a few runs to get a handle on things. I’ve used 3 different nutrient lines and 4 different soil mixes and they all came with a learning curve. When you’re experienced you can adapt, correct and learn quickly, a new grower has to go through the experience of shit hitting the fan to get there.
What line are you using?
Your issue likely isn’t with the nutes at all. First and foremost I would consider genetics and that you may be making mistakes. Not really ideal to hear of course, but what specifically is going on? Switching nutes mid grow will cause you headaches.
